My fabulous SP2 Gift and Reveal

Here is a picture of the wonderful gift Christina sent me.



There are THREE skeins of Koigu, a neat sock pattern, 2 skeins of Lorna's Laces, a Clover Yarn cutter, Harry and David chocolate popcorn (which is already half gone!), Bath & Body Works lotion, and a Circular solution Port-a-Pocket. Christina, you've really outdone yourself! I love everything and feel so spoiled :) Thank you.

I probably won't get much knitting time this weekend. My soap sale is on Wednesday, and I have at least 3 batches of lotion, 3 batches of soap and a batch of lip balm to make. Not to mention all of the labeling of the above and more. Today I'm spending the day at MIL's to work on some fabric bags for packaging. I've already weighed out 2 batches of soap and 1 batch of lotion to make later, and managed to make 1 batch of lotion, too. I just need to stop and get 2 industrial cans of olive oil on my way home. I'm hoping making the bags doesn't take too long. I've also made some business cards, and need to make up an order form, too. Too much to do, too little time! I'm majorly stressing about it.

Jason is up north today. He got invited to go with the president of his company, to his cabin and fly fish and target shoot this weekend. It's a pretty impressive thing that he got invited, so he couldn't refuse.

Here's a recipe for Bean & Cheese Enchiladas I made the other night:

1 large can Old El Paso Mild Enchilada Sauce
1 package Chi Chis Restaurant Seasoning
1 package small flour tortillas
1 can black beans, drained and rinsed
1 8 oz package Monterey Jack Cheese
1 8 oz package Cheddar Cheese

Preheat oven to 375. Mix enchilada sauce and restaurant seasoning in medium bowl. Microwave for 2 1/2 minutes and stir well. Microwave flour tortillas to soften. Spoon 1 TB (approx) sauce mix onto each tortilla, spoon 1 TB beans on top, top with a sprinkle of each cheese, and roll, placing each tortilla seam side down in a large baking dish. Pour over remaining sauce mix, and top with remaining cheese. Bake in oven for 25 minutes, or until lightly browned and cheese is bubbly.
